SALTY MAFFINS WITH COLD CUTS, CHEESE CREAM AND CRANBERRY SAUSE

Ingredients:

500g Plain Flour (all purpose flour).

4 tsp Baking Powder.

3 Whole Eggs.

315ml Milk.

50ml Good Olive Oil.

50g Cheddar cheese grated.

50g Parmesan Cheese grated.

100g Chrysodalia smoked pork loin chopped.

100g Chrysodalia Smoked Turkey Finely Chopped.

2 tsp Tomatoes ketchup.

1 small pinch of salt.

220g Cream Cheese.

40g Cranberry Sauce.

100g Baby Rocket.

25g Caper Leaves.

ΒΌ Bunch chopped Spring onions

1 Mix together the cream cheese with the cranberry sauce and roll into 12 small balls approximately 21g each place into a freezer and allow to freeze completely about 30 minutes.

2 Combine together in an electric Mixer the flour, salt and Baking Powder.

3 Add the Eggs, milk and olive oil mix gently taking care not to over mix!

4 Fold in the cheese and cut Chrysodalia Smoked Meats half fill the prepared Muffin Cups.

5 Top off with the remaining Muffin mix or until the cases are at least 3/4 Full.

6 Bake in a Fan assisted Oven at about 180 for about 20-25 minutes.

7 Serve Warm with a Rocket Spring Onion and caper salad.
